We love to cook in the Boni Maroni house ... although it is usually mum testing out her new flavour combinations on the family as well as some tried and true favourites, the whole family gets in on the act.  Dad makes a mean spaghetti bolognaise (he has a secret ingredient that he won't share) and the kids love to cook on a Friday night.  Cup cakes and slices feature heavily on the weekend menu as well as rice paper rolls bursting with fresh ingredients.

  

Our recent trip to Italy has ignited again our love of Italian food and we are in the throws of loving all things Italian at the moment!  Mum is busy trying to replicate Carmella's bean soup and an awesome pesto spaghetti ... keep trying mum!

  

Here is Taylor's favourite slice that she makes for birthdays and sometimes just for fun.  Hope you like it!

  

Rockin' Chocolate Slice   

Line a 18.5 x 28cm baking tray with baking paper.  Preheat oven to 180C.

 

Ingredients:

1 cup self raising flour

2 tablespoons cocoa

1 cup coconut

1/2 cup sugar (we use raw sugar straight from the mill in the sunny Bundaberg cane fields but you can also use caster sugar)

4 ounces butter, then melt

1 egg, beaten

  

Rockin' Chocolate Icing:

2 cups icing sugar

1 teaspoon butter, softened

2 heaped tablespoons cocoa

hot water

tiny marshmallows

sprinkles

coconut

white chocolate, melted

  

Method:

Mix dry ingredients in a bowl.  Add the melted butter and beaten egg to the dry ingredients and mix well.  Press into tin with finger tips so that the corners are filled and the base is nice and even.  Bake 10 -12 minutes.  Ice when cool with Rockin Chocolate Icing.   

  

For icing:  Mix the icing sugar, cocoa and butter in a bowl.  Add hot water, drips at a time until the icing is thick but spreadable.  Top cooled slice with icing and decorate madly with marshmallows, coconut and sprinkles.  Drizzle with melted white chocolate.  Serve with cream and strawberries or it is just as great on its own.

  

Variations:  You can substitute the marshmallows for any of your or your friends favourite lollies.  We have tried chopped clinkers and chopped honeycomb.
